NEW ENGLAND STUFFING
This is actually mom's stuffing for Lobsters...
Here's the whole thing...
Get a couple of lobsters,
I call Smith's,
Have them steamed and pick'm up.
When you get'm home,
Slice'm down the middle,
Break them open,
And stuff them with raw stuffing, as follows.
Bake at 350 for about 20-30 minutes,
Or until bright red and stuffing is cooked.
Stuffing:
Ingredients:
2 Bunches Scallions, Chopped.
1 Bunch Italian Parsley, Chopped.
2 Boxes Turkey Stuffing (Cubes)
2# Shrimp, Medium, Uncooked, Peeled.
2# Scallops, Chopped.
2 Sticks Butter, Melted.
2 Cups Water.
Mom recommends Balls stuffing,
But I couldn't find any.
Buy the biggest bag of turkey stuffing you can find.
I found some Kroger brand, 2 boxes, and chucked the seasoning mix.
(If you can find a big bag of Pepperidge Farms, that's the best!)
Anyhow,
In the biggest pot you can find,
Mix all the ingredients, add butter, mix, add water.
I filled a � 10pan with all of that,
And backed at 350 for about 45 minutes....
You can scale back I'm sure,
But usually making extra of this stuffing doesn't hurt.
HURRY CURRY CHICKEN 1 Can Cream of Mushroom Soup 1 Can Cream of Chicken Soup 2-4 tsp of Curry Powder (To Taste) � cp Onions, Chopped fine. 2 tsp butter 1.5#-2# Chicken Breast, chopped, boiled. 1 Green Apple, Chopped. 1 Parsley Italian Chopped. 8 OZ Sour Cream (If Desired...) In a bit pot, Melt butter, Add Curry, Brown Onions. Add soup mixes, Chicken, Parsley. Simmer, Add Apples and Sour Cream, Serve over rice...
BREAD, CHEESE, AND CHOCOLATE
News travels fast. That's called Merienda... It's a Spanish afternoon snack... It's great!?!?! I just can't have cheese anymore... Big loaf of Italian Bread, Big Bar of Heshey's Chocolate (With Almonds...;-) ?) Land O Lakes White American Cheese Hard Salami, Cotto, Whatever... Some real nasty Spanish Red Wine... Rip off a piece of bread, Add a bite of chocolate, Add a bit of cheese, Take a swig o wine, Munch some salami, Begin again...
STEAMED ARTICHOKES 2 Fresh Artichokes 1/2 Cup Extra Virgin Olive Oil 1/2 Cup Balsamic Vinegar 2-4 Tsp Chopped Garlic, To Taste (LOTS!) 2 Tsp Hot Chinese Mustard, Powdered Cut the bottoms off the chokes, Steam for about 30-45 Minutes, Careful not to burn. In a blender, add all other ingredients. Blend on highest speed. Should come out thick. If you want, add water to thin. Careful, this stuff REALLY stains. Serve chokes hot, Peel and dip leaves in sauce, Scrape off meat with teeth... Trim hairs off choke at end, Dip and eat choke.
BAKED ARTICHOKES 1 Can Artichoke Hearts, Drained. 1 Can Italian Bread Crumbs, Fine. 1/4-1/2 Cup Extra Virgin Olive Oil 2 Fresh Lemons, Cut 4 Thin Sliced from Middle, Quarter rest.
In a bowl, combine the Chokes, Oil, and Fresh Lemon Juice. Coast all, then add bread crumbs, mix till all is well coated. Place in oven safe open dish, Place lemon slices on top, Bake at 350 for 30 minutes.
